Hazelnut Butter is the most recent of home made my nut butter ventures. I'm not too sure why it hadn't occurred to me before to make it as it's so damn good. The heavenly smell of the nuts toasting in the oven is reason enough to make it, as well as using it to add delicious flavour to lots of recipes!If I still haven't tempted you...add a little cocoa powder and you've even got your very own Nutella.
Ingredients:
500g hazelnuts
1-3 tbsps caster sugar or some maple/agave syrup to sweeten
To Make:
- Spread hazelnuts onto a baking sheet and roast in a 180C oven for 10-15 minutes.
- While they are still warm, transfer the nuts to a clean tea towel.
- Wrap the towel around the nuts to form a little bundle.
- Make sure that the nuts aren't gunna escape and wiggle the nuts around so that they grind against each other. The friction will cause the skins to fall off the nuts.
- Transfer the nuts to a food processor - make sure all the skins are off for a smoother finish.
- Process the nuts until they turn into a creamy and velvety butter, about 4-5 minutes, adding a little water if necessary to help break them down.
- Add sugar/syrup to taste to sweeten and blend a little more.
- Transfer to a glass jar with a tight fitting lid.
