I've been meaning to put this little gem up for a while now, it's been sitting pretty as a draft for far too long.
Perfect, chewy blondies, dotted with melted Rolos and swirls of Nutella.
I don't think I need to say much more - Happy Weekend to you all!
Note - Obviously Nutella and Rolos are not dairy free, but the base blondie recipe is - Horray!
You could swap out the extras for nuts/dairy free choc chips/your own homemade chocolate spread or peanut butter...Go wild and enjoy dairy (and gluten) free goodness.

Ingredients:
1/2 cup dairy free margarine
1 large egg
1 cup light brown sugar
1 teaspoon vanilla extract
1 cup GF flour
1 cup Rolos, chopped (2-3 tubes)
1/3 cup approx. Nutella
To Make:
- Preheat oven to 180C.
- Grease an 8-by-8-inch baking pan; set aside.
- Pop the margarine in a large, microwave-safe bowl and melt in the microwave for about 1 minute.
- Add the egg, brown sugar, vanilla, and whisk until smooth.
- Sift in the flour and stir until just combined.
- Stir in the Rolos.
- Pour the batter into your prepared pan, nudging into the corners and smoothing out the top.
- Get a small spoon and drizzle the Nutella over the whole thing. You could melt it slightly to make it easier or just drop it in blobs and then marble and swirl with a fork or skewer.
- Bake for about 20 to 25 minutes.
- Allow to cool in pan for 30 minutes before slicing and serving.
