Two Ingredient Vegan Caramel Sauce




Two ingredient vegan caramel should be a synonym for a beautiful little pot of gold.


It quite simply does what it says on the tin, so I don't think there's any need for me to waffle on about how good it is. 

It's easy to make and has a delicious subtle caramel flavour from the dates, as well as being beautifully creamy and smooth due to the almond milk that has been blended in. Who knew 2 ingredients could create something of such beauty? 
Try adding a little vanilla or some sea salt to really bring out the flavours.

Ingredients:
16 dates - try to get medjools as these are normally larger and have a deeper caramel like flavour
3/4 - 1 cup almond milk


Extras: 
1 tsp vanilla bean paste
1 tsp sea salt






To Make:

  • Soak your dates in some warm water for about half an hour prior to making the caramel.
  • Once the dates have been soaked, pop into your food processor - make sure any pits are removed first! 
  • Blend the dates until they become a paste.
  • Add the almond milk a bit at a time and carry on blending until your preferred consistency is achieved. I added a whole cup of almond milk to make a runnier caramel sauce for pouring.
  • If you want a really smooth caramel, you can now run the whole mixture through a fine sieve to get rid of any bits front he date skins, or you can just leave it as it is and serve straight away! Alternately, before blending the dates you can remove them from their skins but this can be a bit fiddly.
  • Add vanilla and salt to taste, if using.
  • Use straight away drizzled over desserts or as a sweetener  Keep in a jar in the fridge.
