Raw Chocolate Pudding




When you're busy it's great to have a few fall back recipes that are simple, speedy and only call for a handful of everyday ingredients. With my love of avocados we pretty much always have a few sitting in the kitchen so this recipe for me is the absolute perfect thing to use up all that green goodness. Throw in a few dates and some raw cacao powder and you have possibly the most delicious, simple and healthy pudding known to man.

I know, I know - Avocado in desserts has been done before - I'm super late to the chocolate-avocado-pudding-party and I'm not entirely sure how it's taken me this long to join in. I've even used avocado before in my PB Swirl Nutty Brownies and loved it so there really are no excuses for my behaviour. All that can be done now is to make (and eat) a whole lot of these little beauties to make up for lost time...

Luckily, they are free from refined sugar, dairy and wheat; as well as being vegan and packed full of all the goodness of avocado and cacao so there can't be anything too wrong with having one or two of these when the fancy takes ya. 

Try serving them with a little coconut yogurt and some cacao nibs on top to make them even more heavenly.



Ingredients:
1 very ripe avocado
2 heaped tbsp raw cacao powder
1/2 cup dates - approx. 12, soaked
4 tbsp water or almond milk, adjust to suit desired thickness

To serve (optional):
Coyo Natural Coconut Yogurt
Cacao Nibs







To Make:

  • Put the dates into a small bowl and soak in some water water - just enough to cover them - leave for about half an hour to soften slightly. This can be done in advance and they can be left longer than half an hour.
  • When ready to make the pudding, drain the dates and add them along with the avocado flesh and cacao powder to a blender or food processor.
  • Blitz until everything comes together and add in the water to help it along.
  • Add more water if the mixture is still too thick, taste and add more dates or cacao to meet your tastes.

  1. Oh this pudding sounds amazing. When I go to the store tomorrow I am going to get some avocados and make this for us!
