Homemade Date Syrup

Date Syrup is so easy to make and is an amazing natural sweetener. All it takes is dates and water and you're set to go. It's delicious used just like you would maple syrup to top pancakes, french toast, bacon etc... or for baking recipes. It's cheaper, lower in calories and higher in fibre but just as sweet :)

Ingredients:
20  dates
1 1/4 cups water
1 teaspoon vanilla extract

To Make:
Roughly chop the dates by hand or blitz in a blender for 30 seconds.
Combine the dates, water and vanilla in a saucepan and bring to a boil.
Reduce heat to medium-low and simmer, stirring frequently 15 minutes.
Cool to room temperature, put in a blender and blend until smooth.
Store in the fridge.
